Zucchini with Mostaccioli


3 – 4 Medium Zucchini, sliced in rounds
Large Onion , sliced
5 – 6 Garlic Cloves, sliced
Olive Oil
1 Lb Mostaccioli
Salt & Pepper


In a large sauté pan heat olive oil and add garlic. Saute over medium heat 2 to 3 minutes and add onion. Saute , an additional 2 to 3 minutes and add zucchini. Cook til tender, add additional olive oil as needed.

Meanwhile, cook pasta in boiling salted water until al dente. Drain pasta and toss with zucchini and grated parmesan cheese.
