Ziti Alla Norma


1 Lb Ziti
28 oz Can Tomato, Crushed
2 Medium Eggplant
4 Cloves Garlic, sliced
2 Leaves Basil
Parmesan Cheese, Grated
Olive Oil
Salt & Pepper


Cut Eggplant in round slices ½ inch thick, do not peel. Fry eggplant in oil and remove to a paper towel to drain. In a sauce pan add olive oil and garlic. Once garlic begins to brown, add tomatoes, salt and pepper. Cook 15 minutes.
Cut fried eggplant into 1 inch strips and add to sauce. Cook an additional 10 minutes. Cook pasta until al dente and add to sauce. Toss and serve with grated parmesan.
