Summer Tomato Sausage Pasta


Red Onion chopped
Celery chopped
Garlic chopped
Pepper (Chili, Jalapeño), sliced & seeded
Fresh Oregano
Fresh Thyme
Cherry Tomatoes halved
Fresh Ground Pepper
Balsamic Vinegar


Sauté sausage about two minutes, add onion, celery, garlic, chili
pepper, tomatoes, oregano, thyme and pepper. Sauté for two
minutes adding Balsamic vinegar.
Place in a 350-degree oven for 25 minutes or more.
Meanwhile cook pasta in salted boiling water until al dente.
Drain pasta and top with tomato and sausage sauce.
Top with grated cheese.
