Penne con Salciccia e Piselli


1 lb Penne Pasta
¼ Cup Olive Oil
1 Onion Finely Chopped
12oz. Italian Sausage
1 28 oz. can Pureed Italian Tomatoes
¾ cup Heavy Cream
1 cup Peas
Salt & Pepper, to taste
Parmigianino Cheese, grated


Sauté onions in olive oil until they begin to soften. Remove the sausage from its case and add to onion, breaking apart with a fork. Cook the sausage and onions until the onions are golden. Add tomatoes to the sausage mixture, salt and pepper to taste. Cook over low heat for about 30 minutes to reduce. Add cream, and reduce about 5 minutes. Add peas and mix well.

Meanwhile, cook pasta in boiling, salted water until al dente. Drain and add to tomato sausage mixture. Stir together for minute and serve with Parmigianino cheese.
