Sylvia's Pecan Pie Cobbler


1 stick butter (1/2 cup)
1 cup self rising flour
1 cup white sugar
1 cup milk
4 large eggs
3 teaspoons vanilla
1 1/4 cup light corn syrup
1 1/4 cup packed brown sugar
1/4 cup butter, melted
1/2 teaspoon salt
1 1/2 cup chopped pecans


Preheat oven to 375 degrees.

While oven is preheating, place 11" x 7" baking dish in oven and melt 1 stick of butter in bottom of dish.

In mixing bowl, mix together flour, white sugar, milk, 1 egg and 1 teaspoon vanilla until well blended. Pour over melted butter. DO NOT MIX!

In same bowl, whisk together corn syrup, brown sugar, 1/4 cup melted butter, 2 teaspoons vanilla, 3 eggs and salt until well blended. Stir in pecans.

Pour over batter. DO NOT MIX!

Place baking dish on a sheet pan in case of a boil over.

Bake for 50 - 60 minutes. Remove and allow to cool slightly before serving. May be served warm or cold.
