Pasta with Pancetta & Cherry Peppers


Pasta of Your Choice
Tomato Sauce
Pancetta, cubed
Mild Cherry Peppers, sliced & seeded
4 Garlic Cloves sliced
Italian Seasoning
Salt & Pepper
Fresh Chopped Parsley
¼ Cup Grated Parmesan


Saute pancetta in a skillet until it starts to crisp on the edges. Add garlic , when it begins to brown add tomato sauce and season. Cook partially covered for 25 minutes.

Taste and season as needed. Add fresh ground pepper and cherry peppers.

Add chopped parsley , drained pasta and grated parmesan.
Cover and let rest 5 minutes and serve with grated parmesan.
