Nona’s Chicken Soup


10 Chicken Legs, skin removed
2 Medium Onions, crescent sliced
3 – 4 Garlic Cloves, sliced
2 Small Carrots, sliced
2 – 3 Celery Stalks, sliced
Parsley , stems separated, leaves chopped
5 Whole Cherry Tomatoes
Salt to taste
Grated Cheese


Arrange chicken in soup pan and add just enough water to cover chicken. Salt the water and bring to a boil. Add vegetables and parsley stems only. Bring to a boil again and reduce heat to slow simmer. Cook 45 minutes to an hour, onions will be translucent and breaking down. Remove from heat and allow to rest. Remove chicken legs and debone the chicken, return meat to soup or serve as desired. Serve soup with grated cheese.
