Linguine Alla Carbonara


1 pound linguine
2 tbs. olive oil
1 medium onion, chopped
4 cloves garlic, chopped
3-4 sliced mushrooms
6 strips of bacon, cut into 1 inch pieces
1 1/4 cup white wine
6 large eggs whisked
1 cup grated Parmesan cheese
Salt & Pepper


Bring a large pot of salted water to a boil. Meanwhile, saute onions and garlic in olive oil for 2-3 minutes. Add mushrooms and bacon, string until most of the liquid from the mushrooms has cooked off. Add white whine and continue cooking until bacon is cooked through but not crisp. Remove from heat and set aside.

Cook pasta until al dente. Whisk together eggs, grated cheese, salt, and pepper. Stir egg mixture into vegetables and bacon. Stir over low heat just until begins to thicken. Do not cook through. Drain pasta and immediately toss with mixture. Heat from the pasta will finish the sauce.
