Fry Bread

2 cups all-purpose flour
2 teaspoons baking powder
¼ teaspoon salt
¾ cup hot water

Mix all ingredients together in a medium mixing bowl until it forms a ball. Let dough rest for 30 minutes.

In a small to medium cast iron fry pan (or heavy bottom pan), heat ½ inch canola or vegetable oil over medium high heat to approximately 350 degrees, or until a small bit of dough sizzles immediately when placed in oil.

Divide dough into 4 pieces and, using your hands, stretch dough into a circle. Place one (or two dough circles, if you have room) into the oil. When light golden brown, flip dough and fry the other side until light golden brown. Remove from oil to paper towels.

You can add herbs and spices to the dough to flavor it any way you want.

Serve plain Fry Bread with honey butter as a great addition to brunch.
