Focaccia Bariesi


-1 tsp sugar
-1 cup warm water
-1 package dry yeast 7 grams
-1 small potato
-1tsp salt 3 tbls olive oil
-Olives, onions, or tomatoes
-Oregano, rosemary, or any aromatic herb.
-Course salt


Combine 1 teaspoon of sugar, 1 cup of warm water, and 1 package of dry yeast. Let the yeast grow for 10 to 20 minutes.

Next, boil 1 small potato. Once tender, smash the potato. While still warm, combine it with 2+- cups of flour, 1 teaspoon of salt, and 3 tablespoons of olive oil.

Combine all ingredients into a moist dough. Place them in a well oiled 12x12" round cake pan and let it rise for 1 to 1.5 hours.

Place tomatoes, olives, or onions on top along with oregano, rosemary, or any aromatic herb. Add course salt.

Bake at about 425 degrees for 20 to 25 minutes.
