Chicken Beverly


4, 4 – 6 oz. Chicken Breasts
Mozzarella, cubed or shredded
Whole, Fresh Sage Leaves
4 – 6 Red Potato, quartered
3 Garlic Cloves, smashed
½ cup White Wine
Olive Oil
Salt & Pepper to Taste


Preheat oven to 475 degrees. Pound Chicken breast thin, sprinkle with salt, pepper, garlic powder and drizzle with olive oil. Marinate one hour.
Taking one chicken breast at a time, lay out flat on a work surface. Sprinkle with mozzarella, one or two sage leaves and a slice of very thin prosciutto. Roll and secure with a toothpick.
Place chicken and red potatoes and garlic cloves in a baking dish. Add white wine and salt and pepper to taste. Bake covered for 15 minutes, remove cover and bake another 10 minutes. Rest covered for 10 minutes.
