Cauliflower & Fresh Tomato Quick Sauce


3 Tablespoons Olive Oil
3 - 5 Cloves of Garlic , sliced or chopped
1 - 2 lbs Fresh Tomatoes , coarsely chopped
About 6 Fresh Basil Leaves
Salt & Pepper to taste
1 Head of Cauliflower cut bite size 1lb Pasta


Begin to bring a pot of water for cooking pasta to boil and start Tomato Sauce. Heat olive oil and add garlic, stirring until lightly browned. Add tomatoes , basil ,salt and pepper. Over medium to low heat cook for about 5 min. stirring frequently. When water has come to a boil salt water and add cauliflower just until tender. Remove with a strainer or slotted spoon and set aside. Add pasta to same boiling water, cook until al dente. Add cauliflower back to pasta, drain together and toss with tomato sauce, serve with grated cheese.
