Artichoke Hearts & Egg by lino's


2 pkgs Frozen Artichoke Hearts

1 pkg Frozen Green Peas

3-4 Garlic Cloves, sliced

12 Eggs, beaten

12T Grated Romano or Parmesan

4oz Olive Oil

Salt & Pepper




Place frozen artichoke hearts in a 12" skillet. Cover with water and add garlic , salt and pepper to taste. Bring water to a boil then turn down to a simmer and cook till artichokes are tender. Add olive oil, frozen peas, coarsely chopped parsley, and mint. Raise heat.

Beat together egg and cheese, salt and pepper to taste. Pour over peas and artichokes. Once egg begins to firm, cover and cook on low for about 15 minutes.
