Crispy Herbed Chicken


1/2 cup white or yellow corn meal
1/4 cup all-purpose flour
2 TBSP grated Parmesan cheese
1 1/2 tsp Italian seasoning
1/4 tsp garlic salt
1/4 tsp pepper
2-1/2 to 3 lb assorted chicken pieces (skinned works well)
1/2 cup milk
2 eggs


Preheat oven to 375 deg. In flat dish combine corn meal, flour, grated cheese, Italian seasoning, garlic salt and pepper. Beat eggs in a small bowl. Add milk and whisk to mix. Dip chicken pieces into milk mixture and coat with dry ingredients. Place chicken on rack in a 15 x 10-inch pan. Bake 50 to 55 minutes or until golden brown and liquid runs clear when pierced with a thin knife.
