Winter Vegetable Stew


2 TBSP cooking oil
2 onion, chopped
3 cloves garlic, chopped
apple cider
2 potatoes, peeled and cubed
2 sweet potatoes, peeled and cubed
2 to 3 cups broccoli, cut into chunks
1 head cauliflower, broken into florets
4 carrots, peeled and sliced
3 to 4 TBSP maple syrup
1/4 cup tomato paste
2 tsp dried dill (or 1 TBSP fresh dill)
Black pepper and salt to taste


Heat cooking oil in a large pot with a good fitting lid. Saute onions until translucent. Add garlic and saute for an addition minute. Add potatoes, sweet potatoes, and carrots and saute for a couple of minutes to coat with onions and oil. Add enough cider to come about halfway up the vegetables.
Stir in syrup, tomato paste and dill. Simmer, covered for about 10 minutes.
Add broccoli and cauliflower and continue to simmer about 15 minutes or until vegetables are just tender. Do not overcook. Add salt and pepper to taste and serve hot.
