Feta Cheese and Chive Muffins


1 ½ cups all purpose flour
1 TBSP baking powder
1/4 tsp salt
2 eggs
1 cup milk
2 TBSP butter, melted
½ cup feta cheese, crumbled
3 TBSP minced chives


Combine the flour, baking powder and salt. In another bowl, whish the eggs, milk and butter. Stir into dry ingredients just until moistened. Fold in the feta cheese and chives. Fill greased or paper lined muffin cups 2/3 full. Bake at 400 deg for 18 to 20 minutes or until they test done. Cool for 5 minutes before removing to a rack. Serve warm.
