Country Apple Cake


1 3/4 cups sugar
3 eggs
1 cup oil
2 cups flour
1 tsp salt
1 tsp vanilla
1 tsp baking powder
1 TBSP cinnamon
2 cups apples, peeled, cored and chopped
1/2 cup pecans, chopped (optional)


Measure all ingredients, except apples and pecans, into large bowl. Beat together thoroughly with spoon. Fold in apples and pecans. Bake in greased and floured 9 x13 pan at 350 deg for 45 to 50 minutes. Cool and cut into squares to serve from pan.
