Mile High SPAM™ Pizza Pie


1 can (12 oz) SPAM® Classic, finely chopped
2 TBSP garlic olive oil
1 (16 oz) can Italian chopped tomatoes, drained, divided
2 (10 oz) pkgs frozen chopped spinach, thawed
1 (16 oz) container Ricotta cheese
7 (10-inch) sundried tomato basil wraps (flavored tortillas)
3 cups shredded Italian blend cheese, divided
8 oz sliced pepperoni
1 (12 oz) jar roasted red peppers, drained, chopped, divided
1 (6 oz) can sliced black olives, divided


In a large frying pan, brown the SPAM in the garlic olive oil for about three minutes. Remove from heat. Reserve three tablespoons of tomatoes for garnish. Add remaining chopped tomatoes to SPAM. Set aside. Squeeze excess moisture from spinach. In a bowl, combine spinach and ricotta cheese. Set aside. Place one wrap in the bottom of a 10-inch springform pan. Spread with 1/2 the SPAM mixture. Sprinkle with 1/2 cup of shredded cheese. Spread a second wrap with 1/2 the spinach mixture and place on top of the SPAM layer in pan. Reserve three tablespoons of red peppers and olives for garnish. Top spinach layer with a third wrap, 1/2 the pepperoni. 1/2 the red peppers, 1/2 the olives and 1/2 cup of shredded cheese. Repeat layers. Place remaining wrap on top of the top layer in pan. Sprinkle top with remaining 1 cup shredded cheese, and reserved tomatoes, red peppers and olives. Bake in 350 degree oven for 20-25 minutes until cheese melts on top. Cool 5 minutes. Remove rim of springform pan. Cut into 8 wedges and serve!
