1 loaf bread (Italian or French varieties work best)
1 (12 oz) can SPAM, thinly sliced
1/2 lb. thinly sliced cheese
2 thinly sliced tomatoes
fresh basil
olive oil

Southwestern SPAM Stew
1 onion, diced
2-3 garlic cloves, crushed
3 TBSP canola oil
1 pkg chili mix
1 (12 oz) can SPAM (chopped)
1 can black beans
1 can pinto beans
1 can kidney beans
1 can diced tomatoes
1 can yellow corn
1/2 cup grated cheese (any kind)


Slice bread, layer SPAM, cheese, tomato and basil on a slice of bread and top with a second bread slice. Brush each side with olive oil. Heat grill pan to medium high. Place sandwich in pan, top with a heavy brick or heavy skillet. Flip sandwich once it has browned, about 2-3 minutes. Brown the second side. Cut and serve with your favorite sauce.

Walter’s Note: A George Foreman grill works great as a pannini press.

Southwestern SPAM Stew
Sauté onions and garlic in canola oil. Add remaining ingredients except the cheese. Cook on medium low for 30 minutes. Serve with grated cheese on top.
