Lino's Chicken Cacciatore for Two


1 Frying Chicken cut into 8 pieces
1 Can Pear Tomatoes
2 cups Chopped Onion
4 Tbs. Chopped Garlic
8 Oz. Red Wine
1 Cup Pitted Kalamata Olives
3 Cups Sliced Mushrooms
4 oz. Olive Oil
2 Tsp. Salt
1 Tsp. Pepper


In two fry pans fry garlic and onions in olive oil over medium heat. Salt and pepper to taste. Add tomatoes, olives, and wine. Include all of the juice from the can. Cook down slightly. Add chicken and olives. Cover the pan and cook for ten minutes. Then add mushrooms. Lower heat slightly. Cook for twenty minutes or longer. Serve family style on a platter. Serve with roasted potatoes or vegetables. Be sure to have plenty of Italian or French bread. And use the bread to clean your plate so that no sauce remains. This will make you very happy.
