Chunky Tomato Gravy


1 medium onion, diced
1/4 cup oil (pan drippings work very well)
1/4 cup all purpose flour
2 cups tomatoes, peeled, chopped reasonably fine
1 cup milk
½ cup chicken broth
2 TBSP apple cider vinegar
1 TBSP sugar
salt and pepper to taste


Saute onions in oil over medium heat until soft (about 3 minutes). Stir in flour and cook until just barely brown. Add tomatoes and saute about a minute. Stir in milk, broth, vinegar and sugar. Cook, stirring constantly until thickened. Season with salt and pepper.
