New Orleans Grilled Salmon


2 lb. salmon filets

2 oz. vegetable oil
1 T. cayenne pepper
1 T. ground thyme
1 T. ground coriander
1 T. ground cumin
1 T. chili powder
1 T. garlic powder
1 t. lemon zest


Mix the oil and herbs and spices together to form a paste. Apply the paste to all surfaces of the salmon filet.
Prepare the grill for the direct heat method. Place the fish on the grill and cook for 4-5 minutes, then flip and grill another 4-5 minutes.
Remove to a hot platter and serve.
