Sylvia's Kitchen -- Individual Tomato Tarts


6 English Muffin Halves (3 English muffins)
2 tablespoons softened butter
½ teaspoon salt
Pinch of ground black pepper
½ teaspoon dried basil
2/3 cup mayonnaise
½ cup grated Parmesan Cheese
1 tablespoon minced garlic
¼ cup finely chopped onions
6 large slices of ripe tomato
3 tablespoons melted butter
2 English Muffin Halves (1 whole), ground in a food processor


Preheat oven to 425 degrees. Place 6 muffin halves on a baking sheet and place in oven for 5 minutes. Remove, spread each with a little butter and cool.

In small bowl, mix together, salt, pepper, basil, mayonnaise, Parmesan cheese, garlic and onion until well blended.

Place a tomato slice on each buttered muffin half. Spread mayonnaise mixture evenly over each tomato.

In a small bowl, mix ground muffin halves and butter, sprinkle evenly over each tomato tart.

Place in oven and bake for 10 – 15 minutes or until tops are lightly browned and bubbly.
