Sylvia's Kitchen -- Crispy Waffles


2 Cups prepared baking mix (Bisquick or Jiffy)
¼ Cup vegetable oil
¼ Cup melted butter
2 Large eggs, beaten
½ Cup club soda
½ Cup milk
2 Tablespoons sugar
1 Teaspoon vanilla extract
½ Cup toasted, chopped pecans (optional)


Mix together all ingredients until well blended.

Preheat waffle iron, spray with non-stick cooking spray. Pour appropriate amount for your waffle iron, lower lid and wait!

To keep waffles hot and crispy, preheat oven to 175 degrees and place waffles directly on the grate. Do not cover them….that makes them soggy.
