Memphis-Style Flank Steak


3 lb. flank steak
1 t. garlic powder
1 t. cumin
1 t. brown sugar
1 t. ground mustard
1 t. chili powder
1/2 t. kosher salt


Mix all spices together to make a rub. Rub the spices on entire surface area of flank steak. You can wrap in plastic wrap and marinate in the fridge for up to 72 hours.
Prepare grill for the direct heat method.
Grill for 8-10 minutes per side for medium-rare doneness. Remove from the grill and let rest for 10-15 minutes. Slice meat against the grain and serve.
