Ginger Cookies


  • ¾ cup shortening (Crisco) or butter

  • 1 cup sugar

  • 1 egg

  • ¼ cup molasses

  • 2 cups sifted all purpose flour

  • 2 teaspoons baking soda

  • 2 teaspoons pumpkin pie spice

  • ½ teaspoon salt

  • Sugar for rolling


Preheat oven to 350 degrees.

Cream shortening, add sugar and beat until fluffy. Add the egg and beat thoroughly. Add molasses and combine. Sift flour, baking soda, pumpkin pie spice and salt together. Add to sugar mixture in ½ cup increments, combining thoroughly in between.

Make one inch balls, roll in sugar and place on greased cookie sheet. Press down lightly with fingertips.

Bake for 10 – 12 minutes of until lightly browned.
