Italian Sausage Cacciatore-Style


2 lbs. sweet Italian sausage
1/2 lb. pancetta, diced
14 oz. can tomato puree
2 green bell peppers, sliced
1 red onion, sliced
2 T. garlic, minced
1 t. dried oregano
1 t. dried basil
2 T. olive oil
1/4 c. red wine
Salt & pepper to taste


In a large skillet, brown the sausage for 8-10 minutes per side. Remove from heat and set aside. Add the oil to the pan with the vegetables, pancetta and garlic. Saute 6-7 minutes until browned. Deglaze with red wine and combine with sauteed veggie mixture. Stir in the oregano and basil. Taste and season if necessary. Add the sausage. Simmer for an additional 10-15 minutes. Remove to platter and serve.
