Corned Beef and Cabbage -- 3/12/08


5 lbs. corned beef brisket
2 12oz. beers
16 oz. beef broth
3 Tbs. pickling spices
1 lb. baby carrots
1 head green cabbage
Salt and pepper to taste


In a 4-quart pan, bring the beer and the broth to a simmer. Mix in the pickling spices and simmer for 20 minutes. Place brisket in the pan and top with carrots. Cut the cabbage into 1/8 wedges and place them in the pan. Season with salt and pepper.

Cover the pan and simmer on low heat for 3 hours or until the meat is tender. Remove and serve.
