Asparagus & Prosciutto Angel Hair


8 ounces Angel Hair Pasta
2 Tablespoons Olive Oil
2 Garlic Cloves
1 Small Onion, diced
2 Cups sliced Mushrooms
4 oz. Prosciutto cut in strips
1lb. Asparagus, cut to 1 inch pieces
1 ¼ cup heavy Cream
1/3 cup grated Parmesan Cheese
Salt & Pepper
½ teaspoon Red Pepper Flakes


Cook pasta, 4 to 5 minutes, drain and return to pot.

Heat olive oil in a large frying pan over medium heat. Cook onion, garlic and mushrooms until they begin to soften. Add prosciutto and asparagus and cook until asparagus is bright green, about 3 minutes. Add cream, 1/3 cup cheese, salt, pepper and red pepper flakes to taste. Reduce heat, simmer until sauce thickens, about 4 minutes.

Pour sauce and vegetable mixture over pasta and toss to coat.
