Vegetable Bruschetta


1 Loaf Ciabatta Bread, sliced lengthwise in half
Roasted Whole Garlic Cloves
6 Thin Asparagus Spears, cut into 1 1/2" pieces
1 Small Zucchini, cut diagonally into 1/8" slices
1 Red Pepper, sliced thin
Shredded Mozzarella
Crumbled Goat Cheese
Olive Oil
Salt & Pepper


Mash roasted garlic with plenty of olive oil. Brush sliced bread with olive oil from garlic mash and spread a few pieces of mashed garlic over top. Top with shredded mozzarella to taste.
Bake in 450 degree oven to toast just slightly, until very lightly browned . Coat vegetables lightly with olive oil ,salt and pepper. Spread out over a flat pan and bake until lightly browned. layer vegetables on top of bread . Sprinkle with goat cheese and drizzle with olive oil.
