Roast Chicken & Root Vegetables


Whole Chicken
1 Head garlic , halved
1 Lemon , quartered
1 Large Onion , sliced thick rounds
2 Carrots ,2 Parsnips, 1 Sweet Potato,
& 2 Red Potatoes , all cut in large pieces
1 Stick of Butter, melted
Salt & Pepper


Preheat oven to 425 degrees. Salt and pepper the inside of the chicken. Stuff with halved garlic and quartered lemon. Set in roasting pan and add vegetables around chicken. Pat chicken dry with a paper towel. Pour melted butter over chicken and vegetables. Season with salt and pepper
