Homemade Pasta ala Lino's
At Home Pasta Dough
2 Cups Flour
6 Egg Yolks
1 Whole Egg
Salt, three finger pinch
Reserve ½ egg shell for measure of oil & water.
With a Cuisinart or by hand mix in eggs, one ½ half egg
shell oil, and one half egg shell water. Add salt and flour ,
pulse, or mix by hand. Add additional flour if too wet, olive
oil if too dry.
Wrap pasta dough in plastic and rest 15 minutes.
