| Grilled Chicken with Roasted Garlic & Herb Sauce |
| Ingredients Needed: 1 - 2 Heads of Garlic cut in half Whole Sprigs Fresh Thyme 2 Lemons Juiced 1 Lemon cut in half Whole Chicken in pieces 1 cup Fresh Chopped Parsley Salt & Pepper Olive Oil |
| Directions: Roasted Garlic & Herb Sauce Place garlic halves on a sheet of foil along with 2 sprigs of fresh thyme. Drizzle with olive oil and salt lightly. Wrap foil to form a sealed packet. Roast in oven about 30 minutes. When garlic has cooled slightly squeeze out the cloves into a food processor. Add ½ cup olive oil, juice of 2 lemons, ½ cup chopped fresh parsley, and leaves from 6 sprigs of thyme. Puree everything until smooth . Grill Chicken Toss chicken pieces with olive oil , salt and pepper. On a hot grill place chicken skin side down. Grill about 20 minutes turn and baste with garlic herb sauce. Continue cooking until chicken is brown, another 15 to 20 minutes ( 160 degrees). Place lemon halves on grill cut sides down, just until hot and lightly marked. Remove chicken from grill to a large bowl or deep platter. Toss chicken with the remaining garlic and herb sauce. Squeeze the grilled lemons evenly over the chicken and serve. |
