| Pesto Lasagna Rolls |
| Ingredients Needed: Lasagna Noodles Ricotta Shredded Mozzarella Pesto Pesto 2 cups basil leaves 2 cloves garlic ½ cup grated parmesan cheese 1/3 cup pine nuts ½ cup extra virgin olive oil Salt & Pepper |
| Directions: Using a food processor, finely chop the basil and garlic. Add the parmesan and pine nuts and pulse into a course paste. With the machine on, slowly add the olive oil until incorporated. Season with salt and pepper. Can be refrigerated in an airtight Cook lasagna noodles 3 - 4 minutes, just until able to bend (better to under cook than over cook). Take a lasagna noodle, spread a thin mixture of mozzarella, ricotta, and a little pesto on it , then roll it up. Stand up in a baking dish , top with a little pesto and bake about 15 minutes in a 300 degree oven. |
