Organic roasted pork loin, grilled teriyaki salmon, spaghetti with chicken meatballs, and the best part of these mouth-watering fares is you can eat them guilt free.

"People want a healthier lifestyle, and in order to do that we have to provide more balanced meals, freshness, and very healthy for your body foods," says Mary's Market founder John Suh.

The gourmet choices, many organic, meatless, and rich in omega 3 fatty acids, are part of the cafe's new inherently healthy food strategy. Mary's Market founder John Suh and his son, executive chef Bryan Suh, say a big focus is antioxidant rich foods, vitamins that are believed to help prevent cancer, heart disease and strokes.

"We're all living longer now because of medical advancements and if you want to feel really good when you're 50, 60, 70, 80 years old, you have to start eating healthy now, so I think people have caught on to that, and we have put together a menu that will really fit in with that concept," says executive chef Bryan Suh.

John Suh, a cancer and heart disease survivor, says people are becoming more conscious of their diets.

"I think more and more the food industry will respond to the needs of society, and I just happen to be one of the victims, and I was a lot more sensitive to the needs of society," says Suh.

A new concept for the Rockford area that father and son say will provide healthier gourmet choices at affordable prices for the entire family.

The new cafe on East State Street will serve as a test kitchen for the other Mary's Market Cafes. Suh hopes to bring the new menu to the other restaurants in the next few months. The new cafe will also offer a separate dinner menu and will begin serving wine and beer this summer.
