1Lb Mafaldine Pasta
1 Cup plain bread crumbs
1/4lb Anchovies, cut to small pieces
Salt & Pepper
DirectionsBegin to bring pasta water to a boil.
Meanwhile heat 3 tablespoons of olive oil in a sauté pan and add bread crumbs. Stir constantly, careful not to burn. Remove from pan to dish when light golden.
Add pasta to boiling salted water. While pasta is cooking, in a large sauté pan add ½ cup olive oil. When oil is hot add anchovies, stir for 10 seconds and then add 1 cup of the pasta water. Use care as it may splatter.
Drain pasta and add about half of the anchovy oil, some bread crumbs and toss lightly.
Add more sauce to taste and top with more bread crumbs and pepper.
