Pasta with Tomatoes & Fresh Mozzarella


1 Pound Pasta of Choice
2 Pounds Tomatoes , chopped
1 Onion, sliced thin
½ Cup Olive Oil
1 Large Fresh Mozzarella
¼ Cup Fresh Basil, coarsely chopped
Salt & Pepper to taste


Bring a pot of salted water to boil for pasta.

Chop or tear the mozzarella into bite sized pieces and put aside. Add basil ,salt & pepper, and mix together. Mix in tomatoes, onion, and olive oil.

Cook pasta until al dente.

Drain pasta and add the mozzarella and tomato mixture. Serve immediately, sprinkle with some grated Parmigiano.
