4 - 6 ounces pieces of Red Snapper*
Extra Virgin Olive Oil
Ground Black Pepper
DirectionsOver medium coals, place a grill safe pan (or use a fish basket or sheet of aluminum foil) off flames. Allow pan to come to the same temperature as the grill (5 - 10 minutes).
Oil pan, and place snapper on top of oil. Brush tops of snapper with olive oil, sprinkle generously with salt and pepper.
Close lid on grill and cook for 7 minutes. Flip snapper and cook for an additional 7 - 12 minutes, or until cooked through. Place fish on a plate and cover with aluminum foil. Allow fish to sit for a few minutes after removing from grill to finish cooking.
Place fish, seasoned side up, on plate, sprinkle with lemon juice and top with Mango Melon Salsa.
