Green Beans (cut to aprox 3” if needed)
4 - 6 Cloves Garlic - Chopped, Sliced or Mashed
2oz. ( 6Tbl.) Olive Oil
(Oil can be reduced for heart healthy)
5 Medium sized fresh Tomatoes, chopped
3-4 Fresh Basil Leaves
Salt & Pepper to taste
DirectionsBring cooking water to a boil for the beans and pasta. Heat olive oil in a small pan and add garlic. Cook garlic over low heat stirring and watching carefully not to overcook. Add chopped tomatoes, basil , salt and pepper to taste. Cook at a gentle boil for about 10 minutes, stirring frequently.
Add green beans to salted boiling water , cook just until tender . Using slotted spoons or strainer lift beans out of cooking water and set aside.
Cook pasta in the same water. When pasta is al dente add beans back to pot and stir together. Drain and toss with sauce.
