4 cups Arugula Leaves 2 Cloves Garlic ½ cup Walnuts ¾ cup Grated Parmesan Cheese ½ cup Olive Oil Salt to Taste
Coarsely chop arugula leaves and remove any rough stems. In a food processor, blend the arugula, walnuts, and cheese into a fine paste. Scrape down the sides of the bowl and with blade running slowly drizzle in the olive oil. Process until the olive oil is thoroughly incorporated and pesto is smooth. Salt to taste.
