Carrot Cake Squares



Ingredients

Cake



  • 1 1/2 cups vegetable oil
  • 2 cups sugar
  • 4 eggs
  • 2 cups grated carrots
  • 1 cup crushed pineapple drained
  • 1 1/2 cups all purpose flour
  • 1 cup chopped nuts
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. vanilla



    Frosting



  • 1 box powdered sugar
  • 1 stick margarine
  • 3 oz. package Philadelphia cream cheese
  • 1 tsp. vanilla
  • Chopped nuts (optional)

  • Directions

    Cake



    1. Cream oil, sugar and eggs. Add pineapple and grated carrots.



    2. Sift flour, soda, salt and cinnamon together. Add to creamed mixture. Add vanilla. Beat well.



    3. Cook 45 minutes at 350° in a prepared dish.



    Frosting



    1. Mix all ingredients.



    2. Add a little milk if dry.
