2 TBSP olive oil
1 cup onion, chopped
2 - 3 cloves garlic (about 1 tsp), chopped
1 lb Portabella mushrooms, chopped, coarsely
1/4 cup soy sauce
1/4 cup white wine vinegar
DirectionsIn a heavy non-stick skillet, heat olive oil until hot. Add onion, and cook stirring constantly about 3 or 4 minutes or until onion starts to brown. Stir in garlic and cook just a few seconds before adding the mushrooms. Continue to cook, stirring until the mushrooms start to give up their liquid. Add soy sauce and vinegar, and continue to cook on high heat, stirring, until liquid is evaporated. Allow to cool
This is a great relish hot or cold. For example, grill or broil a plain chicken breast. Spoon on a couple of TBSP of this relish and place a slice of cheese on top. Broil until cheese melts and serve immediately. It is also good on hamburgers.
