4 to 5 cups coarsely shredded cabbage
1 TBSP salt
1 cup coarsely shredded carrots
1/2 cup mayonnaise
1/4 cup cider vinegar
1/4 cup sugar
Place shredded cabbage in a large non-corrosive bowl (that means glass) and sprinkle on the salt. Toss to mix salt in. Allow to stand on the counter about 30 minutes. Draining off all liquid, squeezing cabbage tightly. Get out as much liquid as possible. Mix in carrots. Blend mayonnaise, vinegar and sugar completely. Pour over vegetable mixture and toss to coat. Allow to stand in the refrigerator at least an hour before serving. When ready to serve, toss again lightly.
