2 cans Tuna, drained
1 can Artichoke Hearts, drained
1 cup Black Olives, chopped
1 Small Shallot, sliced thin
Toss in a bowl with 2/3 cup olive oil, salt & pepper to taste.
1 3/4 cup Garbanzo Beans, drained & rinsed
2 Cloves Garlic
2t Lemon Zest
3T Lemon Juice
1/4cup Fresh Mint
Salt & Pepper
2T Olive Oil
DirectionsPulse in food processor until smooth.
Slice small baguettes lengthwise and spread with bean mixture.
Add tuna mixture and top with arugula.
