Sea Bass Ala Lino



Ingredients

2Sea Bass Filets
2T Butter
1/8c Olive Oil
1 Lemon, juiced
1/4c White Wine
2T Capers , or to taste
Salt & Pepper to taste

Directions

Preheat oven to 400 degrees

Melt butter & heat olive oil in a fry pan. Salt and pepper one side and place seasoned side down in heated pan. Season top side. Cook filet just until lightly golden. Turn gently, only once until lightly golden on both sides. Add lemon juice, white wine and capers. Simmer just until alcohol cooks off, about one minute. Remove pan to heated oven for 10 min. Allow filets to rest 3 to 5 min. and serve.
