Stuffed Red Peppers

Ingredients

8 – 10 Red Peppers, topped & halved
Olive Oil
4 Cloves Garlic, chopped
1 Red Pepper, chopped
1 Medium Onion, chopped
1 Pound Pork, coarsely ground
1 Pound Beef, coarsely ground
¼ Cup Breadcrumbs
¼ Cup Romano Cheese
2 Eggs, whisked
¼ Cup Parsley, coarsely chopped
Oregano, Salt & Pepper

For Bottom of Pan:

4 Tablespoons Olive Oil
½ Cup White Wine
1 Cup Can Tomatoes & Juices
4 Small Red Potatoes, quartered
1 Small Onion , crescent sliced

Directions

In a frying pan add just enough olive oil to begin to brown garlic lightly. Adding chopped pepper and onion. Salt and pepper to taste. Cook til vegetables begin to soften. Add beef and pork, braise until nearly done. Remove from heat. Mix in a pinch of oregano, parsley, breadcrumbs, cheese and eggs.

Set meat mixture aside and prepare baking pan by adding the following to the bottom of the pan:

4 Tablespoons Olive Oil
½ Cup White Wine
1 Cup Can Tomatoes & Juices
4 Small Red Potatoes, quartered
1 Small Onion , crescent sliced

Loosely pack peppers with meat and lay in pan. Drizzle with small amount of olive oil and white wine. Lightly season with oregano and grated cheese. Bake at 400 degrees, uncovered for 15 minutes. Then cover and bake another 20. Remove from oven and leave covered to rest 10 minutes and serve.
