1 Large bunch of Rapini, cleaned and cut in half
5 Tablespoons extra-virgin Olive Oil
3 Cloves garlic, crushed
8 (3ounce) Pork Sausage Links
Cook the rapini in boiling salted water for 2 to 3 minutes. Drain.
In sauce pan heat 4 tablesspoons of extra-virgin olive oil. Add the garlic and cook until it is golden brown.
Add rapini to saucepan, and sauté for a few minutes. Season with salt to taste. In another pan, heat 1 tablespoon of olive oil, and add the sausage. Cook the sausage for a few minutes, turning frequently.
Continue to cook until golden brown. Then add the cooked sausage to the rapini, and cook together for a few minutes. Trasfer the mixture to a warm plate and serve hot. Garnish with cheese, red pepper flakes, and lemon to taste.
