Herb Roasted Leg of Lamb and Asparagus Asiago

Ingredients

For Herb Roasted Leg of Lamb:

Boneless Leg of Lamb approx. 6 lbs
12 large garlic cloves
Fresh Rosemary
Salt & Pepper
Olive Oil
Peeled Potatoes

For Asparagus Asiago:

1 lb Asparagus, ends removed
Olive Oil
1 cup shredded Asiago cheese
3 Tablespoons dried bread crumbs
1 Tablespoon minced flat parsley
Finely grated zest of lemon
1 – 2 tablespoons lemon juice
Salt & Pepper

Directions

For Herb Roasted Leg of Lamb:

Preheat Oven to 450 degrees. Coat lamb and potatoes with olive oil , season with garlic cloves, rosemary, salt and pepper. Roast at 450 for one hour then reduce heat to 380 for another 15 to 30 minutes, until internal temperature reaches 135f. Allow lamb to rest 20 minutes.

For Asparagus Asiago:

Preheat oven to 450 degrees. Layer asparagus on baking sheet and toss with olive oil to coat. In a bowl toss together cheese, bread crumbs, parsley, lemon zest, salt and pepper. Drizzle lightly with olive oil and lemon juice. Sprinkle mixture over asparagus and bake 15 minutes.
