1 Pound Potatoes, peeled and cut
1 Green Bell pepper, cored seeded and cut
1 Red Bell Pepper, cored seeded and cut
1 Medium Onion, cut
1/4 Olive Oil
Salt & Pepper
1 Pound Italian Sausage
Preheat oven to 450 degrees. Spread vegetables in a single layer in a roasting pan. Drizzle with oil, salt and pepper to taste and stir to coat. Roast stirring once or twice, for about 45 minutes. Pierce sausages in two or three places with a fork. Place sausage on top of vegetables. Bake for 15 to 30 minutes, until sausage is cooked.
