Lino's Baked Chicken With Potoatoes


2 Lemons

1 Chicken, quartered

3 Potatoes, peeled & cut into wedges

1 Tablespoon Olive Oil

6 Sprigs Fresh Oregano

6 Garlic Cloves Finely Chopped

Salt & Pepper


Preheat oven to 450 degrees. Squeeze the juice from lemons in baking pan. Lay oregano across bottom. Arrange chicken skin side up with potatoes, and garlic in pan. Salt and pepper .

Bake chicken for 45 minutes. Baste with juices and continue baking and basting for another 15 to 30 minutes, or until chicken is browned and potatoes are tender.

Transfer to serving platter and pour juices from baking pan over chicken.
